Is it normal to lie awake listening to them breathe even when you are exhausted enough to sleep standing up? Asking for me.

Completely normal. Every man I know has done it. Newborn breathing is genuinely irregular, pauses and snuffles and all sorts, and it settles down after a few weeks. Read the safer sleep list once, follow it, then let yourself sleep.
Two kids in and I still do it occasionally. It never fully goes.
